Seared tuna with sautéed mushrooms and avocado cream, emulsified with olive oil and sesame.

2°Finca Resalso

Braised salmon with quinoa risotto and glazed sauce

3° Emilio Moro

Duck magret with balsamic reduction and sweet potato purée

4° Malleolus

Grilled skirt steak with pan-roasted potatoes.

5° El Polvorete

Passion fruit and mango quenelle
